A one-stop-shop for everything you need for a chic, impressive and easy party, Bake It Pretty is just that. An online shop founded by Amanda Krueger, who searches endlessly to find and fill it with the most creative and nostalgic supplies for baking, crafting and entertaining. We can’t get enough of Amanda and her shop so we’ve added a new monthly feature. A DIY recipe from Amanda creatively using some of her favorite items from the shop. Proving you can have your cake and make it pretty too!

To kick off the series, Amanda is teaching us how to make a delicious Quiche Enfant:

Crustless mini quiche are a fast and easy breakfast perfect for kids and adults.  Use up even your tiniest scraps of leftovers for filling, and dress them up in pretty baking cups to brighten your morning (and keep your muffin pan clean, too!)

Makes approx. 6 servings

Preheat oven to 350
Line a regular muffin/cupcake pan with paper baking cups

Ingredients:

8 large eggs
1/2 teaspoon salt
1 c shredded cheese
Filling ideas: chopped spinach, bacon, sausage, mushrooms, asparagus, tomatoes, etc. (all pieces chopped small)

Whisk eggs together with salt, and a dash of pepper (to taste.)

Add about 1 tablespoon of the filling of your choice plus a pinch of shredded cheese into each cup.  Fill each cup about 2/3 full with the beaten egg mixture.  Bake for about 18-22 minutes.  Enjoy immediately, or cool and refrigerate.  Easy to reheat and enjoy on the go.
